Equal parts:
Salt
Pepper
Dry thyme
Allspice
Cayenne pepper
Or use Caribbean Jerk Seasoning
4 boneless, skinless chicken breasts
1 can black beans
1-2 sweet potatoes, cut into 1 inch cubes
1 tbsp. honey
Juice from a lime
1 tsp cornstarch
1/4 cup chicken broth or water

Directions:

1) Pam spray a casserole dish and mix the can of black beans and the chopped sweet potato. Bake at 350º for 20 minutes while cooking the chicken.

2) Rub the chicken thoroughly with the dry rub or the jerk seasoning, Sear the chicken breasts in a skillet until just browned.

3) Put the chicken breasts on top of the sweet potatoes and beans. Deglaze the skillet with a mixture of honey, lime juice, cornstarch and broth. Reduce slightly and pour this over the chicken and potatoes. Return the casserole to the oven, increase the temperature to 400º, and cook for an additional 20 minutes.

4) Serve with white rice, chopped green onion and lime wedges.

Editor notes: Maddy gave me this recipe from memory. I found several other versions of it, almost all with onion added. None had her honey lime juice glaze, so that part is a must.
