Ingredients: Dry ingredients: 2 cups flour 3/4 cup sugar 2 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt 2 tsp. nutmeg
1/2 cup currants soaked in 1 tbsp. hot water 1 large egg 1 tbsp. milk or more 3 heaping tbsp. of Crisco

Directions:Combine dry ingredients and set aside. Drain currents well before using. Beat 1 egg with 1 tbsp. milk(lightly with a fork) Combine Crisco with dry ingredients(as you would for pie crust). Add egg with milk and currants.
Form dough into a ball so it can be rolled out. If too dry add 1 tbsp. milk or more until it will hold together. Using a rolling pin and pastry cloth lightly floured roll about a quarter inch thick. Using around cookie cutter cut out cookies. Do in batches that would fit on grill.
Cooking Instructions: Heat an electric fry pan or grill (coat with non stick spray) to 275º or 300º. Grill until edge is starting to brown then flip and continue to grill until top feels firm. Cool on racks. If dough becomes too sticky and will not roll put in frig between batches. |

Notes: This recipe was from my mother's mother (my Grandmother, Ruth Whitehouse) who was Welsh. The original recipe called for lard but vegetable shortening works fine. Cookies are excellent with tea; my grandmother would take two and put butter between them.
