1/2 c. flour
1 tsp. baking powder
2 c. cottage cheese
4 c. grated cheese
1 (8 oz.) can chopped green chilies
Optional: chopped ham, cooked bacon, cooked sausage, diced red/green peppers, or chopped onions.

Directions:
Preheat oven to 400º. Melt 3 tbsp. butter in a 9x13x2" pan in the oven for 3 to 4 minutes. Remove pan from oven. In a large mixing bowl place 10 eggs. Whip until frothy. Add the ingredients in the following order: flour, baking powder, cottage cheese, grated cheese, green chilies, any chopped meats, peppers, or onions. Then mix ingredients well. Pour the mixture into a prepared pan. Bake for 40 to 45 minutes or until mixture is set. Serve warm or cold or reheat as necessary.
