1 1/2 lbs. lean pork cubed
1 lg. (20 oz.) can pineapple tidbits
2 tbsp. cornstarch
1/4 c. brown sugar
1/2 c. vinegar
1/2 tsp. salt
1 sm. green pepper (chopped)
1/4 c. chopped onion
2 to 3 tbsp. soy sauce

Directions:
Directions:
Brown pork in small amount of hot fat (cooking oil). Add 1/2 c water, cover and simmer (do not boil) till tender, about 1 hour. Drain pineapple but keep the juice, Combine and stir together sugar, cornstarch, pineapple juice, salt, soy sauce, vinegar, add to pork. Cook and stir till gravy thickens. Add pineapple, green pepper, and onion. Cook 2 or 3 minutes. Serve over hot rice.
