2 medium to small zucchini, sliced
1 egg
2 T. water or milk
1/2 panko or regular seasoned bread crumbs
1/2 c. asiago or parmesan cheese, finely shredded
1/4 tsp. cayenne pepper
assorted seasoning to taste (basil,garlic,salt and pepper)
olive oil

Directions:

Mix egg and water. Mix dry ingredients. Dip zucchini in egg mixture then in bread crumb mixture. Fry in a sauce pan with olive oil or bake on a baking sheet drizzled with olive oil at 400º till golden brown. Drain on paper towel if desired.

When my kids were little, this was their favorite way to eat zucchini and to this day, I think it still might be their favorite. Play with the recipe and find out what flavors you like. It is a simple breading procedure with some seasonings.
