1/4 to 1/2 cup panko or regular bread crumbs

4 eggs
1/3 cup half and half
1/4 t. salt
1/8 t. pepper
dash of season salt (optional)
1 1/4 cup shredded cheddar cheese (5 oz.)

Preheat oven to 350 degrees.

Generously spray 24 mini muffin cups with cooking spray. Sprinkle panko crumbs to lightly cover bottom of cup.

Beat eggs, half and half, salt, pepper, season salt in medium bowl until well blended. Add cheese; mix well.

Add sausage crumbs to mini muffin cups; then spoon evenly into mini muffin cups, about 1 T. each.

Bake at 350 until just set, 12 to 15 minutes. Cool on rack 5 minutes. Loosen quiches from sides of muffin cups with a spoon. Remove from cups. Serve warm.
