2-3 # top sirloin steak, cut 2 1/2 inches thick.
1 cup bread crumbs
1 cup shredded cheddar cheese
4 T. butter, softened
4 T. oil
2 tsp. seasoned salt
2 1/2 tsp. seasoned pepper
1 tsp. crushed garlic

Directions:
Remove excess fat from steak. MIx butter, oil, salt, pepper and garlic and spread on all sides of steak.
Mix bread crumbs and cheese and press into butter mixture on steak, coating well. Place steak in a brown paper grocery bag. Fold end over and staple or use paper clips. Steak may be refrigerated several hours. Before cooking however, bring to room temperature.
Place bag on a rimmed cookie sheet.
Cooking times
Bake at 375º for 30 minutes.
Then for medium rare--425º for 15 minutes
medium well--375 for an additional 5 minutes.
(A total of 50 minutes for med. rare)
Remove steak from bag and let strand 5 minutes and carve into thin slices.
