Preheat oven to 450°

1cup wheat flour
1cup white flour
1 cup warm water (105°)
1 tbsp. yeast
1 tsp. salt
1 tbsp sugar

Topping
1/3 cup tomato sauce
(You can substitute sour cream, olive oil or pesto for the tomato sauce)
2 cups shredded cheese

I like to use my kitchen mixer to prepare the dough. It makes the process easy and less messy.

In mixing bowl, add water. Add yeast and sugar and stir. Let sit for 5 minutes. Once it begins to foam, add the flour and salt. Run the mixure on low speed until the dough forms in a ball and the sides of the bowl looks clean. You may need to add more flour.

Let dough rest for about 1/2 hour. I don't let my dough rest for too long because I'm always in a rush and the pizza still tastes great.

Sprinkle flour on a flat surface and knead the dough.

Spray your pizza stone (or any pan) with cooking spray. Lay the dough on the stone and shape it to fit your baking sheet.

Add sauce, cheese and toppings.

Place tray in oven and cook for about 20 to 30 minutes. You can also put the entire pizza on a grill that is preheated to 450°. Make sure you rotate it every couple of minutes. Cooking the pizza on the grill gives it a nice smoky flavor but it will burn quickly if not monitored and rotated.

It has become a tradition in our home to make homemade pizza every Friday night. While my children love the traditional pepperoni pizza, I make a special pizza that is topped with olives, pickled vegetables, onion, garlic and the Lebaneze Oregano (zatar). The zatar makes the kitchen smell wonderful and the pizza tastes delicious. As the kids got older, they started creating their own pizza and we were treated to a surprise every Friday. Friday is not the same without our pizza dinner.
