2 cloves garlic, pureed
2 tablespoons olive oil
2 (8 ounce) cans artichoke hearts, drained and mashed
2 eggs, slightly beaten
1/2 cup Parmesan cheese, grated
1/2 cup Italian seasoned bread crumbs

Directions:
Directions:
Sauté garlic in olive oil. Add the artichokes and eggs. Cook over low heat for about 5 minutes stirring constantly. Remove from heat and add cheese and bread crumbs. Roll into balls that are about 1 teaspoon each. Roll each ball in additional seasoned bread crumbs. Chill until firm.

May be served hot or cold. If serving hot, bake at 350º for about 10 minutes.
