1 large onion, chopped/diced
2 Tbsp. olive oil
1 (3 lb.) butternut squash, peeled and cubed
2 cups (16 oz.) yellow corn, thawed if frozen
1 small red or green bell pepper, seeded and diced
1 tsp. salt
1/2 tsp. pepper
8 oz. pepper jack cheese, shredded
2 Tbsp. AP flour
1 1/2 cups heavy cream
1/3 cups dry bread crumbs
1/3 cup parmesan cheese, grated

Directions:
Preheat the oven to 375º F. Saute' the onion in olive oil in a large deep pot until translucent. Add the squash and saute' another 4 minutes. Add corn, bell pepper, salt and pepper and continue to saute' for 2 minutes. Spread 1/2 the squash mixture in a greased baking dish. Sprinkle with 1/2 of the pepper jack cheese. Top with remaining squash, then remaining cheese. Mix the flour with the heavy cream until blended and pour this evenly over the gratin. Mix the bread crumbs and parmesan together and sprinkle the mixture over the top. Bake 40-45 minutes until squash is tender and the gratin is bubbly and browned on top. Let stand for 10 minutes before serving.
