Sweet Cucumber Pie:

2 cups cucumbers; chopped
3/4 cup milk
2/3 cup white sugar
2 eggs, beaten
1 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/4 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1 (9 inch) prepared pie crust


Tips:
• The pie will be slightly green in color from the cucumber skins, if you prefer a custard color, peel the cucumbers before cooking.
• The sweet cucumber pie was delicious and favors the taste of the pumpkin pie.

Instructions for Sweet Cucumber Pie:

1) Preheat oven to 350 degrees Fahrenheit, if you do not have a timer 20 minutes will suffice.
2) Place the cucumbers in a pot and cover them with water; bring to a boil. Reduce heat to medium-low and simmer until tender, 15 to 20 minutes. Drain off the water being very careful, as it will be hot.
3) Pour into a blender and mix until smooth. Measure out 2 cups of the blended cucumber and pour into a large bowl.
4) Whisk into the blended cucumber; milk, sugar, eggs, cinnamon, allspice, ginger, and nutmeg. Mix until smooth and pour into pie crust.
5) Bake in the preheated oven until center of pie is set and a knife inserted in the center comes out clean, 45 to 60 minutes.
