2 Tbsp butter
1/2 c diced green peppers
3 c frozen southern style hash brown potatoes (or O'brien peppers and onions added)
1 can condensed chicken broth
2 c light cream
2 Tbsp chopped parsley (optional)
1/2 shredded carrots
1/2 c chopped onion
1 tsp salt
1/8 tsp pepper
shredded cheese of your choice

Melt butter in saucepan. Saute' carrots, green peppers and onion until soft but not brown. Stir in potatoes, broth, salt and pepper. Bring to a boil: lower heat. Cover and simmer 10 minutes or until potatoes are tender. Stir in cream . Heat until piping hot. Sprinkle with parsley, if desired, and shredded cheese as you serve each bowl. Serve with toasted garlic bread topped with mozzarella cheese.
