8 meaty beef short ribs (3 lbs after fat trimmed)
½ cup flour
¼ tsp pepper
¼ tsp ginger
1 tsp salt
½ tsp dry mustard
1 tsp chopped parsley
2 tbsp oil
1 medium onion, sliced
1 clove garlic
12 oz. beer
5 carrots, sliced

Directions:
Directions:
Wash and dry ribs. Combine all dry ingredients and dredge ribs (use plastic bag). Brown in oil with onion. Add garlic, beer, and water if necessary to make 1” liquid. Cover and bake at 300˚F for 2 ½ hours, or until meat is tender. Add carrots for the last 20 minutes. Remove garlic. Serve with rice and a salad.
