Combine in top of double boiler.
2 egg whites (1/4cup)
1 1/2 C. sugar
¼ tsp. cream of tartar or 1 TB. light corn syrup
1/3 c. water

Directions:
Directions:
Place over boiling water and beat with rotary beater until mixture stands in stiff peaks. Scrape bottom and sides of pan occasionally . Fold in 1 tsp. vanilla.
Notes: A portable electric mixer is needed for this. Don’t be surprised if it takes longer than 7 minutes.
