Ingredients: 2 1b . green beans or frozen whole green beans 1 large onion - chopped 2 cloves garlic 1 large can crushed tomatoes or puree 1 tsp. salt - you may need to add more 1 1/2 tsp. allspice 1 1/2 tsp. pepper ¼-1/2 cup olive oil 1 tsp. cinnamon
( a little sugar if the tomatoes are tart)

Directions:String beans and break into 2” t lengths. Wash. You can also use the frozen whole string beans. Sauté onion in oil for a few minutes before adding garlic. Onion takes longer to cook than garlic and you don't want the garlic to turn brown. Sauté until the mixture is translucent. Add beans and water. Stir mixture and cover. Steam for 10-15 minutes or until the beans are half cooked. Beans vary in tenderness and some take longer to cook. Add tomatoes and seasonings, cover and. cook for another 20 to 25 minutes or until the beans are done. Adjust the season- ings. Serve with rice. Note: If you use 5 bags of of frozen beans, you'll need 2 cans of Hunt's tomatoes and an 4 baseball size onions. Adjust seasonings. Auntie El prefers to use Hunt's whole tomatoes that she has crushed in the Cuisinart. My recolleciton is that Sitho used puree. If you add the tomatoes too early the beans will take longer to cook. Your maternal great-grandfather, Nametalla, liked crushed wheat added to this recipe. |
