1 loaf Syrian bread . Split the bread and bake for about 10-20 minutes in a very slow oven. Keep checking to be sure the bread doesn’t burn don’t burn. Break up into bite-sized pieces.

2 c. parsley - optional

1 cup fresh mint leaves - The fresh mint makes all the difference in this salad.

1 head romaine lettuce or iceberg or combination of both

4 scallions, including leaves

2 cucumbers

½ cup radishes

1 c. celery and celery tops

2—3 tomatoes

1 green pepper

1 small clove of garlic, crushed

Chop all vegetables into bite sized pieces.

Dressing:

1Tb. oregano or zathar (not both)

1/3 c. lemon juice

½ c. olive oil

1 tsp. allspice

salt, sumac (optional), and pepper to taste-


Directions:
Directions:
Wash and chop vegetables. Toss vegetables and dressing together. Adjust seasonings. Just before serving, add toasted bread and toss.

Optional:
Chicory may be added. The quantity and variety of vegetables are optional.
The sumac and zathar may be purchase at Lebanese Bakeries.
