1 can cream of celery soup
1 can milk
1/2 stick butter, melted
1/2 small onion, diced
6 small to medium potatoes
1/2 c. cheese (I have used jalapeño jack to give it a little kick)
Salt
Pepper

Directions:
Directions:
Mix soup, milk and butter together, add onion. Peel potatoes. Slice on mandolin very thin. Coat bottom of casserole dish with soup mixture, add layer of potatoes, soup, cheese. Do two more layers of potato, soup and cheese. Bake at 350º for about 90 minutes. This recipe would also be good with smoked Gouda, sharp cheddar, or any cheese that has a strong flavor so that you don't have to use a lot of cheese.
