2 lbs boneless, skinless turkey thighs, cut into 1 1/2 inch pieces
3 tbsp Cajun seasoning, divided
2 lbs red baby potatoes, quartered
28 oz can of diced tomatoes
2 cups chopped fresh (or frozen) green beans, peas or carrots

Directions:
Directions:
Put turkey into medium bowl. Sprinkle with 1 tbsp Cajun seasoning. Stir until coated. Heat large greased frying pan on medium-high. Cook turkey, in 2 batches, for about 5 minutes, stirring occasionally, until browned. Transfer to 4-5 L slow cooker. Add 1/2 cup water to same frying pan. Heat and stir, scraping any brown bits from the bottom of pan, until boiling. Add to slow cooker.
Add remaining 3 ingredients and 1 tbsp Cajun seasoning. Stir. Cook, covered on low for 8 hours or high for 4 hours. Add remaining Cajun seasoning. Stir. Makes about 10 cups.
