1 1/2 cups chopped onion
8 cups chopped butternut squash
28 oz can of pear halves with juice
1 cup sour cream
chives for garnish

Directions:
Directions:
Heat large greased frying pan on medium. Add onion. Cook, stirring often, for about 8 minutes until softened. Transfer to 4-5 litre slow cooker.
Add squash, pears with juice, a generous sprinkle of salt and 2 1/2 cups of water. Cook, covered on low for 8 hours or on high for 4 hours. Carefully process with hand blender or in blender in batches until smooth.
Add sour cream. Whisk until smooth. Garnish with chives. Makes about 12 cups.
