1 c. Sugar
2/3 c. Pumpkin
1 tsp. Baking Soda
1 tsp. Cinnamon
3/4 c. Flour
Powdered Sugar

Filling:
8 oz. Cream Cheese
4 tsp. Butter, soft
1 c. Powdered Sugar
1/2 tsp. Vanilla

Directions:
Directions:
Line jelly roll pan with foil. Place eggs and sugar in a mixing bowl. Beat well. Add pumpkin, baking soda, cinnamon and flour. Spread batter evenly into foil lined pan.
Bake at 350º for 15 mins. While the roll is baking, prepare the filling.

Remove pumpkin roll from oven and let sit for 3-4 minutes; turn it out on a towel that has been sprinkled well (very well) with powdered sugar and roll it up. Let sit for 2 minutes.

Filling:
Whip together the cream cheese, butter, powdered sugar and vanilla.

Unroll cake and spread filling. Reroll. Chill until serving. Can sprinkle with powdered sugar or decorate with holly.

1 small can of pumpkin makes 2 rolls. Freezes well.
