⅓ c apple cider vinegar
½ c lemon or lime juice
½ c olive oil
⅓ c liquid honey
5 c cooked red, black, and/or white quinoa
2 firm apples, cored and chopped
1 bell pepper, diced small
1 c corn kernels (optional)
½ c dried cranberries
½ c dried currants or raisins
1 small red onion, finely chopped
1 c toasted, chopped pecans
1 c fresh parsley and mint, chopped
salt and pepper to taste

Directions:
Directions:
Chop ingredients. Mix together honey, vinegar, lemon or lime juice, and oil to make dressing. Mix vegetables and nuts with cooled, cooked quinoa. Add dressing just before serving.
