1/2 C fine Melba toast crumbs
1/4 C melted butter
8 scallions, chopped fine
1 C broiled chopped mushrooms
2 Tbl. chopped parsley
1/2 lb. raw sea scallops, chopped
1/8 tsp. poultry seasoning
6 Flounder fillets, fresh or frozen

Directions:
Directions:
Defrost flounder if frozen. Combine crumbs and melted butter. Add scallions, chopped parsley, chopped mushrooms, scallops and poultry seasoning. Mix well. Spread on flounder fillets and roll up. Place close together in foil lined shallow baking dish. Bake in a 375 degree oven for 1/2 hr. Serve with hot tomato sauce.
