l lb. medium or small mushrooms
5 TBL. Butter
1 lb. sea scallops
3/4 C white vermouth
1/4 C water
1 bay leaf
1/2 tsp. salt
1/8 tsp. white pepper
3 TBL flour
3/4 C buttered bread crumbs
Parmesan cheese
Mashed potatoes

Wash mushrooms; clean, dry and slice medium thin. Slice stems into rounds. Heat 2 TBL. of butter in skillet, add mushrooms and cook rapidly and briefly. Reserve. Wipe scallops with damp cloth. Turn into saucepan with vermouth, water, bay leaf, salt and pepper. Bring to just a boil and simmer 5 min. Do not overcook or scallops will toughen. Drain and reserve 1C of broth. Quarter each scallop and reserve. In a clean saucepan melt remaining butter over low heat and stir in flour. Add cup of broth and stirring constantly cook until thickened. Remove from heat and stir in cream. Add sautéed mushrooms and cooked scallops. Spoon into six scallop shells(or other baking shells), and sprinkle with buttered breadcrumbs and cheese. Place mashed potatoes around perimeter and bake in 400 degree oven until bubbling and crumbs are golden, about 10 min.
