1 28 oz. can crushed tomatoes
1 c firmly packed brown sugar
4 T molasses
1/2 c bourbon
1/2 c ketchup
3/4 c apple vinegar
1/4 c Worcestershire sauce
2 tsp cocoa rib rub (It's in the book here)
1 T unsweetened cocoa
1/2 tsp salt (I use kosher)
1 T black pepper
1 Tsp cayenne pepper

Directions:
Directions:
In a large sauce pan, combine the tomatoes, brown sugar, molasses, bourbon, ketchup, vinegar, Worcestershire sauce, salt, black pepper and cayenne. Stir between each addition of each ingredient. Simmer over medium heat for 20 minutes (low boil). Add the Cocoa Rub & continue to simmer another 10 minutes. Allow sauce to cool a little and then puree in a food processor. Add cocoa and blend a little more in the food processor. Brush on ribs or chicken that you are smoking/grilling about 15 minutes before they are done.
