4 c chicken stock
4 c cauliflower
2 c potatoes, peeled and chopped
1 c carrots, chopped
½ c onion, chopped
½ c celery, chopped
1 ½ c grated cheese
2 cloves garlic
2 c milk

Directions:
Directions:
Break up cauliflower. Reserve 2 c cauliflower to add before serving. In your soup pot, place 2 c cauliflower, potatoes, carrots, onions, celery, garlic, and stock. Cover and simmer for 20 minutes or until vegetables are tender. Puree in blender until smooth then return to heat. Stir in cheese, milk, and any seasonings you wish. Cook on low until cheese melts. Steam remaining 2 c cauliflower, then stir into soup and serve.
