2 cut up chickens
2 large onions, cubed
3 fresh tomatoes, cubed
¼ c oil
1 ½ inch piece of ginger
3 cloves garlic
1 jalapeno pepper
4 cloves
6 peppercorns
2 ½ tsp salt
3 brown cardamoms
4 cinnamon sticks
½ tsp cayenne pepper
1 tsp garam masala (curry powder)
cilantro

Directions:
Directions:
In a saucepan, add a bit of oil and saute chicken pieces. Remove all chicken from the pan and in same pot, add ¼ c oil and onions. Add the cardamom, cinnamon, cloves, and peppercorns. Saute the onions until golden. Add tomatoes and remaining spices except the garam masala. Add the chicken and cook for about 20 minutes on medium high, stirring occasionally. Sprinkle with garam masala and garnish with cilantro. (Serves 6)
