WV Fried Ramps and Potatoes Recipe

- a mess of ramps
- bacon fat
- potatoes
- eggs

Directions:

Get a bunch of ramps and clean them by cutting off the root tips and washing any dirt off (as you would green onions).

Cut into 1" pieces using tops and green part.

Peel and slice about same amount of potatoes as ramps.

In very large skillet, fry potatoes and ramps together in bacon fat, until done.

Break 2-3 eggs over ramps and potatoes, and stir through.

Let mixture cook until eggs are cooked on bottom.

Turn and cook a few more minutes more, until eggs are done.

Serve with homemade bread or biscuits and butter (good with some homemade applebutter).

Ramp feeds are popular in WV in April, when the ramps are harvested in the mountains. The largest Ramp Festival every year is in Richwood, WV.

My grandparents always went to Buckhannon's ramp feed (Jodi's hometown) when they had a hankerin' for ramps.
