1 (9 or 10 inch) baked pastry pie shell or graham cracker crumb crust
6 egg yolks (save egg whites for meringue)
2 (14 oz) cans sweetened condensed milk
1 (8 oz) bottle lime juice
1/4 tsp cream of tartar
1/2 cup sugar

Preheat oven to 350º. In a large mixer bowl, beat egg yolks with sweetened condensed milk. Stir in bottled lime juice. Pour into prepared pastry shell. In a small mixer bowl, beat egg whites with cream of tartar to soft peaks; gradually add sugar, beating until stiff but not dry. Spread on top of pie, sealing carefully to edge of pastry shell. Bake 15 minutes until lightly browned.
Variation: Omit egg whites, cream of tartar and sugar. Prepare filling as above; bake 12 minutes. Cool. Chill. spread top of pie with whipped cream or whipped topping.
If using frozen packaged pie shell or 6 oz packaged graham cracker crust, use 1 can sweetened condensed milk, 3 egg yolks and 1/2 cup bottled lime juice. Bake 8 minutes.
