2 lbs potatoes, peeled and grated
1 cup flour
2 eggs, lightly beaten
Salt and pepper to taste
Butter or bacon fat for topping (optional)

Directions:
Directions:
Press grated potatoes in a clean white cloth to squeeze out excess moisture. Combine with flour, eggs, and seasoning. Mix thoroughly. Drop by spoonfuls into boiling salted water. Cover and steam until dumplings rise to the top. Remove with slotted spoon. Drain and serve with butter or bacon fat.
