2 lbs cod fish (bone in)
3 lbs white potatoes
1 medium onion (diced)
1 tbsp. parsley
1 stick butter
2 large eggs or 2 small eggs (beaten)
1 tsp baking powder
salt to taste(optional)

Directions:
Directions:
Boil cod fish 1 1/2 hrs. Change water, boil again 1 hour. Drain and cool. In the meantime, peel potatoes and boil until done. Debone cod fish. Add cooked mashed potatoes, butter, onion, parsley, eggs, salt (if desired), baking powder. Combine and mash mixture with masher. Makes 12-24 rounded cakes, depending on size desired. Deep fry in hot oil or butter until golden brown on each side.
