28 oz diced tomatoes
Water
1 tbsp. olive oil
salt and pepper
medium onion, diced
3 cloves garlic, minced
1/8 tsp red pepper flakes
1 lb meatloaf mix
8 oz tomato sauce
10 lasagna noodles broken in 2" pieces
1/2 cup + 2 tbsp. grated Parmesan
1 cup ricotta
3 tbsp. chopped fresh basil

Pour tomatoes with their juice into a 1 quart liquid measuring cup. Add enough water to make a full quart.

Heat oil in a large 12" non-stick skillet over medium heat. Add onion and 1/2 tsp salt and sauté until onion begins to brown (5 minutes). Stir in garlic and pepper flakes and cook until fragrant (30 seconds). Add ground meat and cook until no longer pink (about 4 minutes.

Scatter uncooked pasta over meat. DO NOT STIR! Pour tomatoes with water and tomato sauce over pasta. Cover tightly and bring to a simmer, stirring occasionally until pasta is tender.

Remove from heat and stir in 1/2 cup of Parmesan. Season dish with salt and pepper. Dot with heaping tablespoons of ricotta then cover and let stand for 5 minutes.

Sprinkle with remaining cheese and basil.
