4 c vinegar
4 c sugar
4 c water
whole cloves or cinnamon sticks
beets or carrots

Directions:
Directions:
Wash beets or carrots. Boil beets until done, about 45 minutes depending on size. Carrots should be boiled just until tender crisp, so the pickles do not end up mushy. Combine the water, vinegar, sugar, and add about 2 dozen whole cloves for beets, or 3 cinnamon sticks for carrots. Bring to a boil and simmer for 5-10 minutes. Peel beets, cut into bite-sized chunks, and put still hot into sterilized jars. Carrots should be cut into sticks, similarly. Pour hot solution over vegetables to 1/2 inch of top and process using water bath method. This should be enough syrup for 8 pint jars.
