4 chicken breasts
mango chutney (in a jar)
4 slices of bacon
4 slices of fresh mango
chicken stock
cornstarch
milk or light cream
salt and pepper
Directions:
Directions:
Slice through the chicken breast horizontally, put in mango chutney and wrap it with the bacon, with mango slices on the top (under the bacon). Lay them in a dish with chicken stock half-way up the side. Place in the oven. Mix about 1 Tbsp of cornstarch with a little COLD water (so it looks like milk) and then add it to the hot stock, stirring to mix. When the chicken is done (about 30 or 40 min.) stir sauce round the edge and add milk or light cream & seasoning before serving.

My cousin Annie made this for dinner one (rainy) night in Scotland back in 2002. She had 3 children ages 3 and under at the time (and my 3 were under 10) and managed to whip up this delicious dish in no time - which I've obviously never forgotten.
