Salad
1 pint cherry tomatoes or 2 medium diced tomatoes
1 English cucumber split lengthwise and cut into bite sized chunks
1 each of yellow, green, and red bell peppers cut into chunks
1/2 red onion diced
1 small package of feta cheese, drained and shredded
1 small can of sliced black olives, drained (optional)

Dressing
1/8 c. olive oil
1/8 c. red wine balsamic vinegar (Gary says to add more vinegar than oil because it comes out of the bottle faster :))
lemon juice to taste
3 cloves of fresh garlic crushed

Directions:
Mix salad ingredients in medium bowl. Mix dressing ingredients and add salad and dressing together. May be served immediately but best if refrigerated for several hours. Enjoy!
