1 lb. ground beef
1 C. chopped onion
1/2 C. chopped green pepper
1/2 C. chopped red pepper
1 11 oz. can whole kernel corn, drained
1 8 oz. can tomato sauce
1 pkg (1.25 oz.) taco seasoning mix
1 C. shredded cheddar cheese

Topping ingredients:
1/2 C. Pancake & Waffle mix
2/3 C. milk
1 egg
2 tsp. vegetable oil

Optional ingredients:
Sour cream
Chopped cilantro
Shredded cheddar cheese

Directions:
Preheat oven to 350ºF. Combine beef and onion in large skillet. Brown meat over medium heat, stirring occasionally, then drain. Add peppers, and corn, cook 2 minutes, stirring occasionally. Add tomato sauce and taco seasoning; cook 2-3 minutes. Pour beef mixture into a lightly greased 9" square baking dish. Sprinkle with cheese; set aside. Next whisk together topping ingredients until large lumps disappear. Pour evenly over beef mixture. Bake 30-35 minutes or until golden brown. Top with optional ingredients.
