8 sweet potatoes - peeled and cut into 2 inch size pieces
1/3 cup maple syrup
1/3 cup butter
salt and pepper (to taste)

SUBSTITUTE: Brown sugar for Maple syrup.

Directions:
Directions:
PEEL and chop sweet potatoes into 2 inch pieces. Add same into pot and cook potatoes until tender.

DRAIN all remaining water, return potatoes to the pot.

ADD butter and syrup (or brown sugar) and mash together.

BLEND until a desired consistency is reached.

SERVE hot

TIP: if you melt the butter with the sugar or syrup before you return the potatoes - this will allow for easier blending.
