2 lbs. pork loin - cut into 1 inch pieces
1/2 cup flour
1 tsp. seasoning salt
1 egg
3 Tbsp. water
3 Tbsp. oil

SAUCE:
1 large. - can of pineapple pieces (drained - juice and pieces separated)
1/2 cup brown sugar
1/2 cup vinegar
1 tsp. salt
2 tsp. soya sauce
1 tsp. minced garlic

2 large carrots - thinly sliced
1 green pepper - cubed (or celery)

2 tbsp. cornstarch
2 tbsp. cold water

CUT pork into bite size pieces (approximately 1 inch pieces) - set aside

MIX flour and salt - set aside.

PREHEAT frying pan with 3 tbsp.of oil

MIX egg and 3 tbsp. of water - to create an egg wash.

POUR the egg wash over the pork and coat well.

REMOVE the pork one piece at time and coat in flour mixture. ADD to frying pan and oil.

FRY until golden brown. REMOVE from heat.

IN SEPARATE POT, add sauce ingredients and bring to boil. Once boiling, reduce heat. Mix in small bowl the cornstarch and water. STIR into sauce - to thicken.

ADD pineapple and vegetables to sauce. Once vegetables are tender, add pork. ** if sauce is not thickened to your liking, mix another small bowl of cornstarch and water. ADD same to your sauce ** if sauce is too thick, thin with water.

SERVE over a bed of rice.
