3-4 pound pork loin
8 slices of uncooked bacon
1/3 cup of sun dried tomatoes
1/2 cup of Parmesan cheese
1/4 cup of fresh basil
2 tbsp. olive oil (spiced olive oil optional)

Directions:
Directions:
PREHEAT oven to 350ºF

WITH a blender or food processor, thoroughly puree the tomatoes, oil and cheese. Set aside

SLICE into the pork loin, careful not to slice in half, length wise.

SPREAD the tomato mixture inside the pork loin and add the basil leaves.

FOLD the pork loin closed and wrap with bacon - have the bacon ends resting under the loin.

BAKE on a prepared edged tray for approx. 50 minutes.

Change up the tomato mixture for one of apples, cranberries and goat cheese. Stir those ingredients gently and fill pork loin. Wrap with bacon and bake.
