1/4 c. plus 2 T. butter, softened
3 T. fresh parsley, minced
1/2 tsp. dried rosemary, crushed
1/4 tsp. garlic salt
dash of salt
6 skinless, boneless chicken breast halves
1/4 c. milk
1/3 c. fine, dry breadcrumbs

Oven: 400º ~ Yield: 6 servings
Blend first 5 ingredients; shape into 6 (two-inch long) sticks; freeze until firm. Place each breast half between 2 sheets of waxed paper; flatten to 1/4 inch thickness, using a meat mallet. Place 1 butter stick in center of each meat piece. Fold ends over butter; roll up, starting with long side. Secure with wooden picks. Dip rolls in milk, coat well with crumbs. Place in baking dish; bake 25 to 30 minutes. Pour pan juices over chicken rolls. Delicious week night version of my sister Karen's classic.
