For the meatballs:

1 medium onion, chopped
5 T. butter, divided
2 lb, ground meat (mixture of beef, pork, turkey or veal)
1 c. fine white bread crumbs
1/2 c. half and half
2 eggs, slightly beaten
2 tsp. salt
1/2 tsp. dried thyme
1/4 tsp. freshly ground black pepper
1/4 tsp. nutmeg

For the gravy:

3 T. butter
3 T. flour
2 c. light cream
1 c. beef broth
1/2 tsp. salt
1/4 tsp. black pepper
Paprika and chopped fresh parsley

Directions:

To make meatballs: In a nonstick skillet over medium heat, cook onion in 2 T. of butter for about 5 minutes or until softened. Set aside to cool. Combine the sautéed onion with remaining meatball ingredients in large bowl. Mix thoroughly until fully combined. Shape mixture into 1-inch balls. In large nonstick skillet over medium heat, melt 1 T. butter and cook one third of the meatballs for 8-10 minutes. Repeat twice more until all meatballs are browned.

To make gravy: Add 1 T. butter to drippings in pan. Stir in flour and cook for about 1 minute. Remove skillet from heat and slowly stir in light cream and beef broth. Return to heat and stir constantly until mixture thickens. Add meatballs, salt and pepper. Cook covered for 5 minutes, until meatballs are cooked through. Serve with paprika and chopped parsley sprinkled over the top.

Make-ahead tip: Meatballs can be prepared ahead and frozen. Thaw and make gravy just before serving.

There is no one of Scandinavian descent in the family...at least I don't think so... but make these meatballs and you'll be thinking there's a Swede in the genealogical woodpile SOMEWHERE! Mouth-watering, tempting, and tender comfort food of the highest order.
