12 vanilla wafers
2 (8 oz.) pkgs. cream cheese, softened
1/2 c. sugar
2 eggs

Oven: 325 ~ Yield: 12
Line mini muffin pan with foil cups; place 1 wafer in each. Mix cream cheese, vanilla, and sugar on medium speed until blended. Add eggs, mixing until smooth. Spoon mix over wafers, filling each cup about 2/3 full. Bake 25 minutes; cool. Remove mini cakes from pan and get creative with decor or garnishes such as canned fruit pie fillings, fudge or caramel toppings, preserves, colored sugar sprinkles, pieces of fruit or nuts etc. for a showy finish. These treats are easy to color coordinate for holiday or party occasions and easy to transport.
