2 lbs skinless, boneless chicken thighs
2 tsp olive oil
1 c unsweetened coconut milk
1/4 c mild curry paste
1" slice or piece ginger, chopped
6 carrot's, cut into 2" chunks
1/2 c golden raisins
1 medium red or white sweet onion cut into small wedges
Chopped Cilantro

Directions:
Directions:
In a 12" skillet, saute thighs in oil until browned.

In slow cooker, combine carrot's and onions. Sprinkle ginger over veggies.

In a small bowl, whisk 1/2 c. coconut milk and curry paste, pour over veggies. Place chicken over veggies, spooning sauce over all. Sprinkle 1/2 c golden raisins Place remaining coconut milk in refrigerator. Cook on low 4 hours or high 2 1/2 hours . Stir in remainder of coconut milk after cooking is over. Garnish with chopped Cilantro.
