4 pound roasting chicken
1 bunch of fresh thyme or a lemon, pierced several times with a fork
4 tbsp. melted butter or vegetable oil

Preheat oven to 350º.
Remove the giblets from the cavity of the chicken and discard. Fill the cavity with the fresh thyme or with the lemon. Put the chicken on a rack on a rimmed baking sheet. Rub salt all over the chicken. Drizzle with half of the melted butter or oil. Roast for about 1 hour and 10 minutes, basting several times during roasting with the remaining butter or oil.
When the chicken is done, remove it from the oven. Transfer to cutting board and sprinkle with salt and pepper. Let the chicken rest for 5 minutes. Remove the thyme or lemon. Carve the chicken.
