½ c margarine
1 c sugar
2 eggs
½ c milk
1 ½ c flour
1 tsp baking powder
½ tsp salt
1 grated rind of lemon (optional)

glaze:
juice of 1 lemon
¼ c sugar

Directions:
Directions:
In a large bowl, cream margarine, sugar, and 1 egg. Beat in second egg. Blend in milk.
Add dry ingredients all at once. Stir to moisten. Spoon into a greased loaf pan. Bake at 350ºF for about 1 hour.
Combine lemon juice and sugar in a small pan. Heat and stir to dissolve sugar. Remove loaf from oven and pour glaze over it. Cool in pan for 10 minutes. Remove from pan and cool on a rack.
