1/4 c. soy sauce
3/4 c. orange marmalade
1/2 c. pineapple juice
1/4 c. honey
3 cloves garlic, peeled and pressed
2 Tbsp fresh ginger, minced
1 Tbsp lemon juice
2 tsp fresh rosemary, chopped leaves
1/4 tsp pepper
4-5 lbs pork back ribs, fat trimmed

In a bowl, mix soy sauce, orange marmalade, pineapple juice, honey, garlic, ginger, lemon juice, rosemary, and pepper.
Rinse ribs, pat dry and place half in each of 2 plastic food bags (1 gallon).
Pour half the soy sauce mixture into each bag. Seal bags, turn to coat ribs with marinade, and set into a large bowl to chill for 24 hours.
Line a rimmed pan (12x15) with foil. Set a rack in pan.
Lift ribs from marinade and arrange in a single layer, edges curving down.
Pour marinade into bowl.
Bake ribs in a 350º regular oven, basting every 20 minutes for the first hour.
Bake approximate 90 minutes or until meat is well browned.

Bake instead of grill because marinade tends to burn over a grill.
Heat remaining marinade to a boil to use as extra sauce.
