Smoked Pork
4 ½ - 5 pounds boneless pork shoulder or loin
1 ½ tsp. Pepper
1 ½ tsp. Salt

Memphis Sauce
1 15-ounce can Tomato Sauce
½ c. cider vinegar
½ c. packed brown sugar
2 T. finely chopped onion
2 T. liquid smoke
1 T. Worcestershire sauce
1 tsp. chili powder
½ tsp. bottled minced garlic (1 clove)
¼ tsp. celery salt
1/8 tsp. to ¼ tsp. cayenne pepper
1/8 tsp. ground allspice
3 drops bottled hot pepper sauce

Carolina Sauce
2 c. cider vinegar
3 T. brown sugar
1 T. salt
1 T. crushed red pepper

1.At least 1 hour before cooking soak wood chips, drain before using. Trim fat from pork, liberally salt and pepper both sides of pork. Prep smoker as instruction say, place meat on smoker grill rack close and let it smoke for 4-5 hours or until meat is tender, remove from smoker cover with foil for 15 minutes.
2.In the mean time prepare Memphis sauce in a medium saucepan; combine tomato sauce, vinegar, brown sugar, onion, liquid smoke, Worcestershire sauce, chili powder, garlic, celery salt, cayenne pepper, allspice and hot pepper sauce. Bring to boiling; reduce heat. Simmer, uncovered about 30 min. or until desired consistency.
3.Prepare Carolina sauce, Mix all ingredients in bowl or pourable container.
4.After resting time take 2 forks and shred meat, place in container. For Dennis’ Barbecue pour Carolina sauce on meat to moisten and then add Memphis sauce as desired (either in container or if not everyone likes Memphis style just on bun when preparing.)
5.Memphis Barbecue Sauce is also great to have when barbecuing on the grill: Use warm to brush on beef, pork, or poultry during the last 5 to 10 minutes of grilling Reheat any remaining sauce until bubbly; pass with grilled meat. Cover and store unused sauce in refrigerator for up to 3 days.
