2-3 lbs. fish fillets
1/4 lb, butter
Lemon juice
1 t. dry white wine
Salt, pepper, paprika
Parmesan cheese

Directions:
Directions:
Salt and pepper fish. Put butter in a shallow pan in a hot oven (400º-500º) until butter is well browned. Place fish flesh side down in hot butter and return to oven for 10-15 minutes. Turn with spatula and baste with lemon juice. Sprinkle wine, cheese and paprika over fish. Return to oven for approximately 5 minutes. Then broil until browned. Baste with sauce and serve.

Full disclosure regarding this recipe: browning-the-butter-stage will, almost by definition, speckle up the sides and the top of the inside of the oven. If your oven is like most ovens...i.e. a few more speckles won't be noticed...then heat'er up to 500 degrees and bake a delicious piece of fish.
