Full Pork Rib Racks
Your favorite rib rub such as Famous Dave's Rib Rub

Remove clear membrane from the rib side of the thawed rack if it was not removed. Add rib rub several hours before putting in smoker and keep racks covered at room temperature. Bring smoker up to a temperature of 225º before adding ribs. Keep smoker internal temperature between 220º and 240º and add wood chunks every hour. After 4 hours, wrap racks in foil and continue smoker temperature for another hour at which time meat should be loose to the bone.
Cut ribs into single pieces and serve.
