1 pkg. fresh cranberries
2 c. sugar
2 envelopes Knox gelatin
1/2 c. water
1 c. orange juice (boiling hot)
1 T. grated orange rind
1/2 c. chopped pecans
1/2 c. chopped celery
1 small (7 oz.) can crushed pineapple

Directions:

Soften gelatin in water. Grind cranberries (fine). Combine cranberries and sugar. Let stand for 1 hour. Stir often. Dissolve gelatin in juice. After 1 hour, combine all ingredients. Pour into mold or 8" x 11" pan. Chill overnight. Cut into squares to serve.

This recipe is truly inter-generational. It originated with the matriarch, Maggie. who always prepared it for her Thanksgiving and Christmas tables.. She passed the recipe down to her children who did likewise. And then the recipe became a part of the holiday tradition for the grandchildren. At present, one of Maggie's great-grandchildren cares little about the turkey and the dressing for the holiday meal. He insists only on having the cranberry salad.
