Oh these are good! Time consuming but well worth it.

2 lbs or 2 racks of Pork Baby Back Ribs (allow 1/2 - 1 rack per person )
you can certainly use Side Ribs but they are not as meaty as Back Ribs.
2 Eggs, beaten
1 cup Flour, seasoned with Salt, Pepper, dash of garlic salt.
1/2 cup Oil

Sauce: I love sauce so I always doubled this as it goes so good on Rice.

2/3 cup Ketchup
1 cup Water
1/2 cup Vinegar
1/2 cup Brown Sugar

Mix in a small pot.

2 Tbsp Cornstarch
1/4 cup Cold Water

Directions:
Directions:
Prepare Ribs: wash, trim and cut into individual ribs. Pat dry.

Dip into beaten egg then seasoned flour.
Let dry on wax paper for a few minutes before frying.

Deep Skillet: heat 1/2 cup Oil. Brown floured Ribs, few minutes on each side.
Place in Casserole or Roaster.

Sauce: bring Ketchup, Water, Vinegar and Brown sugar to a boil.

To Thicken: mix 2 Tbsp Cornstarch with 1/4 cup water. Add slowly to Ketchup mixture, stirring till bubbling and thickened.

Pour Sauce over browned ribs in Roaster. Bake 325 degrees for 1 1/2 hours. Cover for first hour only.

These are SO good you may want to double recipe and triple the sauce.
